A delightful dish that combines the sweetness of caramelized onions with hearty pasta, perfect for a quick weeknight dinner.

- 2 tablespoons extra virgin olive oil
- 2 medium yellow onions, very thinly sliced
- Water to deglaze the pan
- 4 garlic cloves, thinly sliced
- Kosher salt or sea salt to taste
- Freshly cracked black pepper to taste
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1 5.3-ounce (150g) tube of tomato paste
- 2 tablespoons tamari (or soy sauce)
- 2 tablespoons nutritional yeast
- 4–5 large oil-packed sundried tomatoes, finely chopped
- 10 ounces (285g) spaghetti or linguine (gluten-free option available)
- Toasted pine nuts, for garnish
- Chopped flat-leaf Italian parsley, for garnish
Instructions
- Bring a large saucepan of water to a boil. Salt the water generously and add the pasta. Cook according to package instructions for al dente. Reserve at least 1 cup of pasta water before draining.
- Heat a skillet over medium-high heat and add olive oil. Add onions, seasoning with salt and pepper. Cook until a light brown fond forms, about 5 minutes, adding water to deglaze as needed.
- Continue cooking onions until deeply golden brown, about 15 minutes.
- Reduce heat to medium, add garlic, and cook for another 5-10 minutes until onions are caramelized and garlic is golden.
- Add red pepper flakes and oregano, stirring to coat for about 30 seconds.
- Add tomato paste, stirring constantly until it caramelizes, about 2-3 minutes.
- Mix in tamari, nutritional yeast, and sundried tomatoes. Turn the heat to low.
- Introduce reserved pasta water to caramelized onion mix. Add the hot cooked pasta, swirling to combine and adding more pasta water as necessary until coated.
- Serve warm, garnished with toasted pine nuts and parsley.
Notes
Leftovers maintain quality for 2-3 days in an airtight container. Reheat on low, adding water if necessary.
