- 1 tbsp sesame or olive oil
- 2 tbsp teriyaki sauce
- 1 cup cooked wild rice
- 1 cup broccoli florets
- 1 cup sliced bell peppers (red and yellow)
- 1 cup green beans or snow peas
- 1 garlic clove, minced
- 1 tsp grated ginger
- Sesame seeds (optional, for garnish)
Instructions
- In a hot skillet with oil, cook the chicken with garlic and ginger until golden. Add teriyaki sauce and let it caramelize for 2-3 minutes.
- Stir in the broccoli, bell peppers, and green beans. Stir-fry for 4-5 minutes until just tender but still crisp.
- Add the cooked wild rice to the skillet and toss everything together. Stir-fry for another 2 minutes to combine flavors.
- Serve hot or let cool for meal prep containers. Sprinkle with sesame seeds if desired.
