Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 3 potatoes, diced
- 1 parsnip, diced
- 2 celery stalks, diced
- 1 cup green or brown lentils, rinsed
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the carrots, potatoes, parsnip, and celery to the pot, stirring to combine.
- Pour in the vegetable broth and add the lentils, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat to low and cover.
- Simmer for about 30 minutes, or until the lentils and vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
Use seasonal vegetables for the best flavor and freshness. You can blend part of the stew for a thicker consistency or adjust the spice level with red pepper flakes.
