Description

A nutritious and hearty one pot vegetable stew, perfect for any day of the week with plant-based protein from lentils.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 potatoes, diced
  • 1 parsnip, diced
  • 2 celery stalks, diced
  • 1 cup green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the garlic and cook for another minute.
  4. Add the carrots, potatoes, parsnip, and celery to the pot, stirring to combine.
  5. Pour in the vegetable broth and add the lentils, thyme, paprika, salt, and pepper.
  6. Bring to a boil, then reduce the heat to low and cover.
  7. Simmer for about 30 minutes, or until the lentils and vegetables are tender.
  8. Taste and adjust seasoning if needed.
  9. Serve hot, garnished with fresh parsley.

Notes

Use seasonal vegetables for the best flavor and freshness. You can blend part of the stew for a thicker consistency or adjust the spice level with red pepper flakes.
