Description
Delicious and healthy Middle Eastern Tofu Kebabs packed with spices, perfect for vegetarian and vegan meals.
Ingredients

- 450g firm tofu prepared according to pack instructions
- 1/4 red onion finely chopped
- 3 garlic cloves minced
- 1 1/2 tsp cumin
- 1 1/2 tsp coriander
- 1 tsp sumac
- 1 tsp dried mint
- 1/2 tsp turmeric
- 1/2 tsp chilli powder
- 1/2–1 tsp salt
- 1/4 tsp black pepper
- 3 tbsp tomato puree
- 65g plain flour or chickpea flour
- 15g fresh parsley finely chopped
- 15g fresh coriander finely chopped
- Oil for frying
Instructions
- Break up the tofu into small pieces and place them in a large bowl.
- Add the chopped onion, minced garlic, and all the spices into the bowl.
- Add the tomato puree, flour (or chickpea flour), parsley, and coriander.
- Use your hands to mash everything together until the mixture holds when shaped.
- Shape the mixture into small kebabs using the palm of your hand.
- Heat a bit of neutral oil in a frying pan over medium heat.
- Fry the kebabs for about one minute on each side, or until all sides are browned.
- Serve the kebabs with rice, pitta bread, salad, and hummus or tahini sauce.
- Alternatively, bake them in a preheated oven at 180C/160C fan for 25-30 minutes.
Notes
Press the tofu to remove excess moisture, adjust spices to taste, and consider adding vegetables for variation.
