Ingredients

- 1 cup whole wheat flour
- 2 tablespoons sugar
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ⅛ teaspoon salt
- ¼ cup unsalted butter (softened at room temperature)
- 2 tablespoons milk
- 2 tablespoons honey
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon (for topping)
- ½ teaspoon sugar (for topping)
- 1 tablespoon milk (for brushing)
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients except topping. Mix until it forms a dough, adding milk if necessary.
- Shape the dough into a flattened disk.
- Roll out the dough between two sheets of parchment paper to about ¼ inch thick.
- Cut out crackers with a 2-inch square cookie cutter and place on the baking sheet. Poke holes in each cracker.
- Mix remaining cinnamon and sugar. Brush milk over dough squares and sprinkle with cinnamon-sugar mixture.
- Bake for 12 minutes, checking every two minutes until golden brown, usually about 16 minutes.
- Let cool completely on the baking sheet as they will harden.
Notes
Store in an airtight container for up to three weeks. Re-crisp in the oven if they become soft.
