Delightful brownies topped with a rich coconut and pecan frosting, perfect for any occasion.
Ingredients
Scale
- 1 cup butter, melted
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1 cup shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup brown sugar
- 1/2 cup heavy cream
- 1/2 cup butter
- 4 egg yolks
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix together the melted butter, granulated sugar, and cocoa powder until smooth.
- Add the eggs and vanilla extract, and stir until well combined.
- Mix in the flour and salt just until combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the oven for 25-30 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
- While the brownies bake, prepare the topping by combining sweetened condensed milk, brown sugar, heavy cream, butter, and egg yolks in a saucepan. Cook over medium heat, stirring constantly for about 10 minutes until thickened.
- Remove from heat and stir in the vanilla extract, chopped pecans, and shredded coconut.
- Once the brownies are done, let them cool completely in the pan.
- Spread the topping evenly over the cooled brownies. Cut into squares and enjoy!
Notes
For best flavor, use fresh pecans and coconut. Let brownies cool completely before adding topping for better set.
