Delicious no-bake cookies made with coconut and crunchy pecans, perfect for hot days or quick treat cravings.
Ingredients

- 2 cups granulated sugar
- 1/2 cup evaporated milk (or whole milk)
- 1/2 cup unsalted butter, cut into pieces
- 1/4 cup unsweetened cocoa powder (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups old-fashioned rolled oats
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Line two baking sheets with parchment paper or wax paper.
- In a medium saucepan, combine the granulated sugar, evaporated milk, butter, and cocoa powder (if using).
- Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent scorching and to dissolve the sugar.
- Once it reaches a full rolling boil, boil for exactly 1 minute, still stirring constantly.
- Remove the saucepan from the heat immediately.
- Stir in the vanilla extract and salt until well combined.
- Quickly stir in the rolled oats, shredded coconut, and chopped pecans until everything is evenly coated.
- Drop spoonfuls of the mixture onto the prepared baking sheets.
- Let the cookies sit at room temperature for at least 30-60 minutes, or until they are set and firm.
Notes
Store the cookies in an airtight container at room temperature or in the refrigerator. They will last about a week.
