A delightful dish combining comforting flavors of potatoes with fresh spinach in a creamy sauce, perfect for a quick weeknight dinner.


Ingredients

  • 600 g potatoes
  • 250 g fresh spinach
  • 1 onion
  • 1 garlic clove
  • 200 g plant-based cooking cream
  • ½ tsp sweet paprika powder
  • ½ tsp smoked paprika powder
  • Salt, to taste
  • Pepper, to taste
  • Nutmeg, to taste
  • 23 tbsp nutritional yeast (optional)
  • Margarine or oil for the pan

Instructions

  1. Wash the potatoes thoroughly, peel if desired, and cook them in lightly salted water until tender. Drain and set aside.
  2. Heat margarine or oil in a pan. Finely chop the onion and garlic, then sauté until translucent.
  3. Add the cooked potatoes to the pan and toss gently until slightly shiny.
  4. Mix in the sweet and smoked paprika, salt, pepper, and nutmeg.
  5. Add the spinach and let it wilt, covering with a lid for about 1–2 minutes.
  6. Pour in the plant-based cooking cream and mix well. Add nutritional yeast if desired and adjust seasoning as needed.
  7. Serve hot and enjoy!
