Ingredients

- 12 eggs
- 1 cup baby spinach
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup feta cheese, cubed
- Salt & black pepper to taste
- 1 tsp olive oil or butter for cooking
- Optional: lemon juice or balsamic glaze for dressing
Instructions
- Crack eggs into a lightly oiled skillet and cook over medium heat until set but still soft, about 3-4 minutes. Break into pieces while cooking.
- Wash and slice cherry tomatoes and cucumber. Cube the feta cheese.
- Layer spinach in a bowl. Add tomatoes, cucumber, feta, and cooked eggs.
- Sprinkle with salt and black pepper. Drizzle with lemon juice or olive oil for added flavor. Serve fresh!
Notes
Store leftovers in an airtight container and consume within a day or two for the best taste. Avoid mixing the dressing until ready to serve.
