- 1 medium zucchini, sliced into half-moons
- 2 carrots, peeled and sliced diagonally
- 1 clove garlic, minced
- 1 tbsp olive oil or avocado oil
- Salt & freshly cracked black pepper, to taste
- Optional: a pinch of chili flakes or a squeeze of lemon
Instructions
- Wash the zucchini and carrots. Slice the zucchini into half-moons and the carrots diagonally.
- Heat the oil in a skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds.
- Add the sliced carrots and cook for 3-4 minutes.
- Add the zucchini to the skillet. Sauté everything together for 6-8 more minutes, stirring occasionally, until the vegetables are tender and slightly golden.
- Season with salt, pepper, and optional chili flakes.
- Transfer the sautéed veggies to a serving dish. Optionally, drizzle with lemon juice to add a fresh flavor.
Notes
Adjust cooking time based on your preferred vegetable tenderness. Feel free to add other veggies like bell peppers or onions for extra flavor.
