Ingredients

  • 1 cup lentils
  • 3 large carrots, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the onions and garlic until fragrant.
  2. Add the chopped carrots and cook for a few minutes.
  3. Stir in the lentils, vegetable broth, cumin, turmeric, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 25 minutes, until the lentils are tender.
  5. Add coconut milk and let it simmer for an additional 5 minutes.
  6. Adjust seasoning if needed, and serve hot.

Notes
