Ingredients

- 1 cup lentils
- 3 large carrots, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Sauté the onions and garlic until fragrant.
- Add the chopped carrots and cook for a few minutes.
- Stir in the lentils, vegetable broth, cumin, turmeric, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 25 minutes, until the lentils are tender.
- Add coconut milk and let it simmer for an additional 5 minutes.
- Adjust seasoning if needed, and serve hot.
Notes
Serve garnished with fresh herbs and enjoy with crusty bread or a side salad. This soup can be stored for up to 5 days in the fridge or frozen for 3 months.
