Description

A nutritious and filling lentil soup that’s easy to make and packed with flavor, perfect for cozy dinners or meal prepping.


Ingredients

Scale
  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the garlic, cumin, and thyme, and cook for another minute.
  3. Stir in the lentils and vegetable broth, and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender.
  5. Season with salt and pepper to taste before serving.

Notes

Rinse lentils before adding them to the pot. Adjust the seasoning to taste and feel free to blend part of the soup for a creamier texture.
